Barrica PX was created from a high rye bourbon which was then enhanced with French Oak staves to give the whiskey a rich smoothness and added sweetness. The whiskey was then aged for twelve months in Pedro Ximenez (PX) sherry barrels which were imported from Jerez, Spain where all Sherry is created. Of all sherries, the Pedro Ximenez has the most unique flavors, adding raisin, apricot and dried fruit aromas to the bouquet. On the palate, the sherry barrel adds a nuttiness that integrates well with the traditional vanilla, caramel, and spice
flavors. It has a long smooth finish that leaves the raisin flavors lingering. Only 390 bottles of Barrel #5 were bottled at 93 Proof.

The whiskey was then aged for twelve months in Oloroso (OLO) sherry barrels which were imported from Jerez, Spain where all Sherry is created. The Oloroso barrel adds a nuttiness, apricot and dried fruit aromas to the bouquet. On the palate, the sherry barrel adds a nuttiness that integrates well with traditional vanilla, caramel, and spice flavors. It has a long smooth finish that leaves the almonds flavors lingering. Only 393 bottles of Barrel #2 were bottled at 93 Proof.
Distilled, aged, and bottled in Kentucky, Chicken Cock Kentucky Straight Bourbon Whiskey has a rich, elegant mahogany hue; a nose which balances oak tones with sweet notes of dried fruit, caramel, and vanilla; and a palate that opens with soft tannins. A creamy, almost buttery mouthfeel is complemented by butterscotch notes and toasted oak, resolving with a vanilla finish. At 90 proof, there is a slight, welcome bourbon heat. The bourbon is bottled in a replica of the Prohibition-era Chicken Cock bottle.

Originally established in Paris, Kentucky in 1856, Chicken Cock was forced to move production up to Canada during Prohibition. The Canadian Rye whiskey produced during that period was then smuggled back into the U.S. in tin cans, earning the brand the nickname, “The whiskey in a tin can."
Age and wood. You can't have great whiskey without great wood. That is why we aged our 8-year-old whiskey in American oak barrels twice. This process allows us to extract all of the great flavor within the oak to create a robust and interesting sipper. Double the wood, double the flavor.
